Some answers from forums indicate that things are not so rosy these days in the Languedoc. We want to buy a 300.000 Euro property with garden and pool on edge of a nice village (Pezenas?) and rent out the property during four months in the Summer to provide income for us. Is it really tough these days to rely on the rental income from such a property?

Julian - I can't really imagine that the Languedoc is struggling any more than any other area in S/SW France. It really depends on what is being offered and how it is marketed. That in turn requires a degree of effort and research, (you've come to the right place!) and a reasonable outlay in respect of kitting the property out etc.
